
Are you having a small Thanksgiving this year because of the pandemic? Why spend hours in the kitchen cooking for 1-2 people when you could spend that time relaxing or playing board games or whatever brings you joy that ISN’T cooking. This is a recipe for a low-stakes Thanksgiving meal that is perfect for a pandemic Thanksgiving. It’s easy and takes minutes to whip together. BONUS – if you haven’t gone grocery shopping yet… it’s not too late. This is only 8 ingredients that will cost you less than $30.
Recipe: Thanksgiving in a bowl
Ingredients:
- 4 pieces of bacon
- 1 box of Stove Top stuffing
- 1 can of diced new potatoes, drained
- 1 can of corn, drained
- 1/2lb or 1lb of sliced deli Turkey
- Salt or seasoning of your choice to taste
- Butter (for stovetop stuffing recipe)
- Turkey gravy
Instructions:
Make the stovetop stuffing according to the instruction on the box and set aside.
In a deep pan fry up the bacon over medium heat. Once it’s nice and crispy remove the bacon and set aside to cool.
Leave the grease in the pan and dump the potatoes in to soak up that salty goodness as they fry. I seasoned my potatoes with some creole seasoning but that’s optional (sometimes I go way overboard with seasoning tbh).
Once the potatoes are heated through (about three minutes, stir occasionally…), tear up the turkey into bite size chunks and add it to the pot. These can be rough tears, don’t worry too much about size. Dump in the can of corn and mix everything together. Reduce the heat to medium-low and cover while you prepare the gravy in a separate pot.
In the pot with potatoes, Turkey, and corn… Now add in the stuffing and mix it all together. Then crumble the bacon on top and mix again. As an optional step, cut up 1-2 tablespoons of butter and fold it into the mix for some added richness. Cover and cook for just enough time to reheat the bacon and stuffing (and melt the butter if you added it).
Serve in a bowl topped with gravy.
